Try out this easy and delicious vegetarian BBQ recipe for Halloumi kebabs:

Serves: 4 (you can change the ingredient quantities to make enough for the whole flat!)

What do I need?

2 medium courgettes
1 large red onion
250g Halloumi cheese, cut into 16 chunks
16 cherry tomatoes

How do I make it?

Preparation:
Start off by halving the courgette length-ways and then thickly slice it. Cut the onion into wedges and separate into pieces. Thread the halloumi, cherry tomatoes, courgettes and onion onto eight skewers. Cover and chill the kebabs until you are ready to cook.

Cooking:
Get the barbecue started and wait until the coals are hot. Once hot, arrange the kebabs on the BBQ. Cook for 4-5 minutes, turning often, until the cheese begins to turn golden and the vegetables are just tender. Serve while still hot!
