Quick microwave curry

Fancy a super quick, one pot easy meal? Also with hardly any washing up? Try this super delicious recipe.

Ingredients

100g spinach

1 tbsp oil

1onion finely chopped

375g butternut squash peeled and cut into 3cm cubes

Frozen peas

Curry sauce

Rice

Method

  1. Put the onions and squash in a microwaveable dish along with a little water.
  2. Cover with a plate and cook on high for 10 minutes or until squash is tender
  3. Add spinach and curry sauce cover and cook for a further 5 minutes
  4. Serve with rice [microwave according to pack instruction’s]
