For the Burgers:
- 750gr Pork Mince
- 75gr Fresh Breadcrumbs
- 2 teaspoons Of finely chopped Sage or 1 teaspoon of Dried Sage
- 2 Spring Onions
- 1 Egg, lightly beaten
- 200gr Potatoes
- Salt and Pepper to taste
For the Garnish:
- 1 teaspoon Olive Oil
- 1 Burger Bun
- 1 Little Gem Lettuce
- 2 Tomatoes, thickly sliced
- 1 Small Red Onion, cut into rings
- English Mustard to taste
For the Apple Slaw:
- 100gr Mayonnaise
- 2 Tablespoons Apple Cider Vinegar
- 1 Tablespoon Sugar
- 1 Tablespoon Grainy Mustard
- 1/2 Teaspoon Salt
- 1/2 Teaspoon Celery Seeds
- 1 Teaspoon Black Pepper
- 1/2 Shredded White Cabbage
- 1 Apples, cored and julienned
- 1 Shredded Carrot
- 1/2 Onion
Instructions for the Burger:
Preheat the oven to 190C/170C Fan/Gas 5 and line a baking tray with foil.
Slice potatoes into chips, coat with oil and seasoning and place on non stick baking tray and cook for 35 mins.
Next Place all the meat mixture ingredients, into a bowl with a good pinch of salt and black pepper. Start mixing with a spoon then finish with your hands to get it totally mixed together.
Divide the mixture in half and place one half into a bowl or box, cover and place in the fridge until needed – it should be used within 2 days. Divide the rest into 4 and form into burger shaped patties.
Heat the olive oil in a frying pan until medium hot, then add the burgers and fry on each side for 45-60 seconds until just browned. Lift out and place onto the lined baking tray. Bake in the preheated oven for 15 minutes until cooked through and hot.
Served the burgers in the buns with mustard, lettuce, tomato and onion.
Instructions for the Apple Slaw:
Combine dressing ingredients in a small bowl & set aside.
Toss with slaw ingredients.
Allow to sit for at least 1 hour before serving.
