beef noodle soup


250G Ground Beef OR quorn mince

1 small onion chopped

1 can chopped Tomatoes

1 beef stock cube dissolved in hot water [substitute with vegetable stock if vegetarian] 

Handful frozen vegetables

Pinch salt and pepper

100g Dried Egg Noodles


  1. In a pan, add a little oil
  2. Cook beef and onion over medium heat until meat is no longer pink; drain.
  3. Add the tomatoes, broth, vegetables and seasonings.
  4. Bring to a boil; add noodles.
  5. Reduce heat to medium-low; cover and cook for 10-15 minutes to until noodles are tender.
